Our journey into the world of chocolate is not just about transforming cacao beans and organic cane sugar into delightful bars; it’s about creating an experience that captures the essence of Santa Cruz and the passion of our Chocolate Maker, Kumar Agarwal. Each piece of chocolate from Choco Del Mar is a testament to the coastal vibes and Kumar’s culinary wizardry.
Kumar’s culinary journey began in middle school, crafting Butter Chicken for his parents’ annual party, sparking a lifelong passion for creating and experimenting with flavors. This zest for cooking followed him through his career as a Software Engineer, where he continued to educate himself through countless online resources. Kumar’s repertoire grew to include award-winning home-brewed beer, a viral sourdough “poke-boule,” and a multitude of meals, breads and desserts, each creation adding layers to his understanding of taste and texture.
The pivot to chocolate
began almost serendipitously during a routine visit to a local natural foods store, Staff of Life, where Kumar’s intrigue was piqued by cacao butter and cacao paste wafers. Despite a rocky start that saw his first experiment with chocolate clump and seize, his resolve only strengthened. His breakthrough came after devouring the insights in “Making Chocolate: From Bean to Bar to S’More” by experts from Dandelion Chocolate. Fuelled by newfound knowledge and a series of experimental batches with mixed results, Kumar honed his craft, eventually achieving the smooth flavors that now define Choco Del Mar’s chocolate bars.
