We discovered goat milk chocolate early in our craft chocolate journey and were immediately captivated. The earthy, tangy richness that goat milk brings to fine cacao is unlike anything else. For Maple Goat, we sought to tame that boldness with the natural sweetness of maple sugar, creating a bar that’s both indulgent and distinctive. Early experiments leaned heavily on the goat milk, which masked the maple’s subtle notes, but after refining the recipe and reducing the goat milk slightly, we struck a balance we love. The result? A delightful flavor journey: an initial burst of goat milk and rich cacao, followed by the warm, lingering sweetness of maple.
